Hank is the creation of chef Tom Goddard. 

Hank focuses on authentic sandwich culture in the US. Using traditional barbecue methods, Hank offers a menu that pays homage to American classics.  

All of our meats are cured, brined and smoked in house using our own Shirley Fabrication reverse flow off-set smoker

The Chef

Tom was Grill Chef at London's top barbecue restaurant Smokestak (Michelin Bib Gourmand) where he learned American barbecue and smoking techniques, and then was  Chef de Partie and Senior Grill Chef at London's best steak restaurant Hawksmoor.  He has specialist experience of Ole Hickory smokers,  charcoal grills and Josper ovens.

Tom works with London's finest artisan bakers, The Dusty Knuckle, making incredible bread to combine with his expertise as a pitmaster to produce Hank Sarnies

The Smoker

Hank invested in "without doubt the best reverse-flow smoker in the world", built by Shirley Fabrication of Tuscaloosa, Alabama.

Hank has one of very few authentic American smokers in the UK. Built to an extremely high standard, the craftsmanship and innovation delivers consistent, top-quality results. Reverse flow cookers are  more fuel-efficient than standard offset smokers, delivering rock-solid temperature control
